Craving a delicious and healthy rice delicacy but don’t want to spend hours in the kitchen? Then try this delicious coconut rice at home by following some simple steps given below. So, pair this with sambhar, chutney or salad for a satisfying dinner.

Ingredients:

1 cup rice, 1/2 cup fresh grated coconut, 1-2 tablespoons oil or ghee, 1 teaspoon mustard seeds, 1 teaspoon urad dal, 1 teaspoon chana dal, 2 dried red chilies, 1-2 green chilies, a few slit curry leaves, 1/4 teaspoon turmeric powder, salt to taste, 1 tablespoon chopped coriander leaves, and 1 tablespoon roasted peanuts or cashews.

Step 1

To begin with this easy recipe, wash and soak the rice. Rinse the rice well and cook it in a pressure cooker or on a stovetop with 2 cups of water. Once cooked, fluff it and set it aside to cool slightly.

Meanwhile, wash and grate the coconut flesh and organize other ingredients. Heat a pan over medium heat with ghee.

At this stage, add in mustard seeds and let them splutter. Then add the urad dal, chana dal, dried red chilies, and green chilies. Sauté for a minute until the dals turn golden brown.

Add the curry leaves and grated coconut. Stir well and cook the mixture for about 3-4 minutes, allowing the coconut to lightly toast and become aromatic.
